Maple Pecan Granola

Yield: 4 heaping cups
Ingredients
  • 3 cups rolled oats
  • ¾ cup pecans, roughly chopped
  • ½ cup almonds, slivered
  • ⅓ cup raw pepitas
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • ⅓ cup coconut oil, melted
  • ⅓ cup maple syrup
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat oven to 340 degrees F. Line a large baking sheet with parchment paper.
  2. Mix together the oats, nuts, seeds, cinnamon and salt in a large bowl. In a smaller bowl, combine wet ingredients. Pour over dry ingredients, and mix well.
  3. Spread the mixture evenly onto your baking sheet. Bake for 20-25 minutes, tossing halfway through, until golden brown.
  4. Store in an airtight container for up to two weeks (if it lasts that long!).
Notes / Variations
GLUTEN-FREE: use gluten-free rolled oats; I prefer Trader Joe's brand.

Substitute whatever nuts you prefer or have on hand, keeping to roughly the same measurements within the recipe.
